Halacha Yomis - Cholov Stam, Gevinas Yisroel OU Kosher Halacha Yomis This column is dedicated in memory of: Rav Chaim Yisroel Belsky, zt'l Senior OU Kosher Halachic Consultant (1987-2016)

Q. In a previous Halacha Yomis you wrote that gevinas Yisroel (cheese with special on-site kosher supervision) is an absolute requirement. However, can kosher cheese be made from cholov stam (e.g. US domestic, non-cholov Yisroel milk)? If yes, is such cheese then considered to be cholov Yisroel? (A subscriber’s question) A. Kosher cheese can certainly be made from cholov stam. Such cheese is like any other cholov stam dairy product, and the OU and other kosher agencies commonly certify it. However, such cheese cannot be considered cholov Yisroel according to most opinions, as the status of the milk remains non-cholov Yisroel, even though the status of the cheese is gevinas Yisroel. (See Rama in Shulchan Aruch Yoreh Deah 115:2.)
